A moins, bien sur, que vous ne les fassiez pr\u00e9parer par votre charcutier.<\/p><\/blockquote>\n\n\n\n<p>Pour environ 1,5 kg de foie gras&nbsp;:<\/p>\n\n\n\n<ul><li>1,8 kg de foies crus<\/li><li>28 g de sel<\/li><li>4 g de poivre<\/li><li>3 pinc\u00e9es de 4 \u00e9pices<\/li><li>10 cl de Pinot des Charentes (vous pouvez \u00e9galement utiliser du Monbazillac, du Sauternes ou du Porto selon vos go\u00fbts)<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-gallery columns-3 is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\"><ul class=\"blocks-gallery-grid\"><li class=\"blocks-gallery-item\"><figure><img data-id=\"331\" class=\"wp-image-331\"\/><\/figure><\/li><li class=\"blocks-gallery-item\"><figure><img data-id=\"333\" class=\"wp-image-333\"\/><\/figure><\/li><li class=\"blocks-gallery-item\"><figure><img data-id=\"335\" class=\"wp-image-335\"\/><\/figure><\/li><li class=\"blocks-gallery-item\"><figure><img data-id=\"330\" class=\"wp-image-330\"\/><\/figure><\/li><\/ul><\/figure>\n\n\n\n<p>1 \u2013 D\u00e9veiner les foies et les mettre \u00e0 mac\u00e9rer pendant environ 1 heure avec l\u2019alcool et les aromates (Commencer par les m\u00e9langer avec l\u2019alcool pour les \u00ab&nbsp;mouiller&nbsp;\u00bb avant de les assaisonner puis les m\u00e9langer \u00e0 nouveau)<\/p>\n\n\n\n<p>2 \u2013 Disposer les morceaux de foies dans une terrine en tassant bien<\/p>\n\n\n\n<p>3 \u2013 Laisser cuire 20 \u00e0 30 minutes au bain marie dans un four \u00e0 160\u00b0C (pour v\u00e9rifier la cuisson, planter la pointe d\u2019un couteau dans la terrine, elle doit ressortir ti\u00e8de)<\/p>\n\n\n\n<p>4 \u2013 Laisser poser une dizaine de minutes puis vider l\u2019exc\u00e8s de graisse qui s\u2019est form\u00e9e \u00e0 la surface<\/p>\n\n\n\n<p>5 \u2013 Laisser refroidir compl\u00e8tement avant de couvrir et emballer la terrine dans un torchon et laisser reposer 3 \u00e0 4 jours au r\u00e9frig\u00e9rateur<\/p>\n\n\n\n<p>6 \u2013 D\u00e9guster avec du bon pain, de la fleur de sel de Gu\u00e9rande et du poivre du moulin.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>[[ASTUCE +]]<\/strong><\/p><p>Ne jetez pas l\u2019exc\u00e8s de graisse mais filtrez la et conservez la dans un bocal au r\u00e9frig\u00e9rateur (elle se conserve tr\u00e8s longtemps).
